Espumante Branco 2008 Bairrada Country: Portugal Region: Bairrada Climate: Mediterranean Soil: Argillaceous limestone Type: Sparkling White Wine Method of cultivation : Guyot Double Cord Average Production: 60 to 70 hl / ha Grape varieties:Maria Gomes, chardonnay e Baga Analysis: Alcohol content: 13,5% vol.; Total acidity: 6,5 g /l, pH: 3.2; Sugars: <5g / l Vinification: Crushing of the grapes with total stalk removal, followed by a skin maceration for 6 to 8 hours at the temperature of 12° C. Fermentation in stainless steel vats with temperature control. Second fermentation in the bottle by the classical method, followed by a maturing stage of 12 months. Tasting Notes: Straw yellow in color with crystalline appearance, fine and persistent bubble. Elegant aroma, discreet, with some fruit. Very nice in the mouth, fresh, with a very delicate mousse and good acidity. Gastronomy: Excellent to accompany grilled and roasted meats, especially lamb and suckling pig.
