MAYOR OF THE MUNICIPALITY OF LOULÉ
A chegada do mês de Agosto representa o Verão na
sua plenitude, com muitas e variadas sugestões a
convidarem-nos a desfrutar do lazer, das actividades culturais, lúdicas e recreativas que nesta altura
se revestem de especial significado um pouco por
todo o Concelho. Na presente edição, começo por salientar mais uma edição da Feira do Livro e do Artesanato de Quarteira que irá, à semelhança dos anos
anteriores, animar a zona do Calçadão. Também
nesta cidade, destaque para o V Festival de “Surfóreggae”, que irá, por certo, trazer nova dinâmica a
uma das principais “salas de visita” do Algarve.
No plano desportivo, saliente-se a “Holiday Camps”,
um campo de férias para jovens com prática de Futebol. Refira-se o “Soccer Scholls Holiday Camps”
acontece no seguimento de um Protocolo assinado
com a “Football By”, na pessoa do Prof. Carlos Queirós, e com técnicos da Manchester United Soccer Shcools, em Vale do Lobo. A Gastronomia tradicional
estará também em evidência com os Manjares Serranos na Cortelha, naquela que será uma oportunidade de recriar e apreciar os sabores típicos da Serra
do caldeirão.
Eis pois, que a todos reitero os meus sinceros votos de um excelente Verão, na diversidade e riqueza que o Concelho de Loulé nos oferece em saudável
convívio e reencontro com familiares e amigos. Para
todos, o meu Bem Hajam.
The arrival of the month of August represents the summer in full bloom, with many and varied suggestions
inviting us to enjoy leisure, cultural, ludic and recreational activities that assume a special meaning at this
time of the year all around the County. In this edition I
would like to start by highlighting yet another edition
of the Quarteira Book and Small Crafts’ Fair that, as in
previous years will brighten up the area of the Calçadão.
Also in the same city, the 5th “Surfóreggae” Festival deserves highlighting, certain to bring new dynamism to
one of Algarve’s main “drawing-rooms”.
In sport, the “Holiday Camps” are worth highlighting,
a holiday camp for the young, with soccer practice. It
should be mentioned that the “Soccer Schools Holiday
Camps” take place as a result of a Protocol signed with
“Football By”, viz. through coach Carlos Queirós and
members of the technical staff from Manchester United’s Soccer Schools in Vale do Lobo. Traditional Gastronomy will also be in the limelight in Cortelha, with the
Mountain Delicacies in what will be an opportunity to
recreate and appreciate the typical flavours from the
Caldeirão Mountain.
I thus renew my sincere wishes for an excellent summer, amidst the diversity and richness that the Loulé
County has to offer, in a healthy gathering and reunion with family and friends. All the best to everyone.

Este conjunto, cerca de 3 dezenas, de trabalhos recentes
de David de Almeida, aparece-nos acompanhado por dois
outros que vêm dos anos 80. Nestas obras embora, classificáveis como desenho (com objectos apensos), ou como
pintura, as duas dimensões são sempre um logro ou uma
ilusão e se, a partir delas olharmos para as outras peças,
bem mais recentes, verificaremos que o mesmo sucede em
todas, tenham elas por suporte o papel, a tela e, evidentemente, a madeira e o ferro das três esculturas que também aqui estão.
This collection of close to 30 of David de Almeida’s recent works
are displayed here, together with two other items from the
80s. In these works, though classifiable as drawings (with objects attached) or as paintings, the two dimensions are always
a hoax or an illusion and if, having them in mind, we look at
other more recent items, we see the same happening in all of
them, whether they are made on paper, canvas and, obviously, on wood or iron, which is the case with the three sculptures
that also can be found here.

Manoli Ortiz de la Torre, nasceu em 1968 na Bélgica, contudo a sua nacionalidade é Espanhola. Estudou Belas Artes
em Saint-Lucas em Bruxelas e trabalhou no Ministério da
Cultura Flamenga daquele mesmo país. Trabalha com lã de ovelha misturada com outros materiais, tais como pedra, vidro e espelhos... procura a expressão do material com a mistura das fibras e das cores.
Na textura, forma, padrão e cor, encontram-se os feltros,
as máscaras e as pinturas acrílicas. A prática criativa desenvolve-se através da decoração, fazendo emergir em expressões plásticas que causam um enorme bem-estar.
Possui um atelier “Atelier Ortiz” situado na Penina – Benafim, no Concelho de Loulé, paredes-meias com a Rocha
da Pena, o segundo pico mais alto do Algarve e está integrado num percurso pedestre na Zona de Reserva Natural.
Manoli Ortiz de la Torre was born in 1968 in Belgium, although
his nationality is Spanish. He studied Fine Arts at Saint-Lucas,
in Brussels, and worked at the Flemish Ministry of Culture in
Belgium.
He works with sheep’s wool mixed with other materials, such
as stone, glass and mirrors … seeking the expression of the
material by mixing fibres and colours. In the texture, form, pattern and colour, one finds felt, masks and acrylic paintings. The
creative practice was developed through decoration, revealing
plastic expressions that cause a huge feeling of well-being.
He has an atelier ‘Atelier Ortiz’ in Penina – Benafim, Loulé
County, next to Rocha da Pena, the second highest hill in Algarve, and it is included in a pedestrian walk in the Area of
the Natural Reserve.

A presente exposição apresenta quase exclusivamente escultura adequando uma das linhas mais fortes da Colecção
de Arte da Fundação EDP às características arquitectónicas
do belíssimo local onde é apresentada. Ocupar um espaço, onde ecoa ainda o testemunho de um discurso religioso dos séc. XVI a XVIII com peças contemporâneas que nele
se integram de forma tão intensa pode fazer-nos pensar
mais em continuidades culturais e capacidade de diálogo
de contrários do que em rupturas e impossibilidades.
This exhibition presents almost exclusively sculptures, adjusting one of the strongest lines of the EDP Foundation’s Art Collection to the architectonic features of the beautiful place in
which they are exhibited. Occupying a space where the evidence of a religious discourse from the 16th and 18th Century still echoes with contemporaneous items that have become
part of it so intensely, may make us think more about cultural
continuity and capacity for the dialogue of opposites than of
ruptures and impossibilities.

A Exposição “Overlappings” surgiu na sequência de um
convite dirigido pelo RIBA –Royal Institute of British Architects. Trata-se de uma exposição de Arquitectura, representativa de uma leitura sobre a arquitectura portuguesa
contemporânea. Participam os arquitectos Aires Mateus,
Bak Gordon, Paulo David, João Favila, Inês Lobo, Ricardo
Carvalho + Joana Vilhena.
A exposição mostra o trabalho de um dos mais originais contextos arquitectónicos da Europa. Os projectos
centram-se na investigação e demonstram afinidades
conceptuais entre si. Estas revelam-se na relação entre arquitectura e território, tempo e materialidade, localidade
e universalidade, permanência e significado cultural.
Os projectos são mostrados em maquetas, desenhos, fotografias, vídeos e possuem largo espectro programático, de
casas até escolas públicas, passando por hotéis e museus.
A exposição tem uma apresentação do arquitecto britânico Jonathan Sergison.
The ‘Overlappings’ exhibition arose out of an invitation from
the RIBA –Royal Institute of British Architects. It is an Architecture Exhibition that represents a reading of contemporaneous
Portuguese architecture. The following architects participate
in the exhibition Aires Mateus, Bak Gordon, Paulo David, João
Favila, Inês Lobo, Ricardo Carvalho + Joana Vilhena.
The exhibition shows the work of one of the most original architectonic contexts in Europe. The projects are focused on
research and show the conceptual affinities between them,
revealed in the relations between architecture and territory,
time and materiality, locality and universality, permanency
and cultural meaning.
The projects comprise models, drawings, photographs and
videos and cover a wide programmatic range, from dwellings to public schools, hotels and museums. The exhibition further features a presentation by the British architect
Jonathan Sergison.

A exposição “Dez Monumentais Esculturas Britânicas”
apresenta 10 esculturas integradas no campo arqueológico romano do Cerro da Vila, estabelecendo uma relação
directa e harmoniosa com a paisagem e a arquitectura do
lugar. A exposição pretende possibilitar a fruição e a partilha, com o público em geral, de obras de arte de grande valor artístico, pertencentes à Colecção Berardo, ao mesmo
tempo que oferece uma oportunidade única para visitar o
Cerro da Vila, antiga vila romana, em Vilamoura.
The exhibition ‘Ten Monumental British Sculptures’ presents
10 sculptures integrated in the Roman archaeological site,
Cerro da Vila, creating a direct and harmonious relation with
the landscape and with the architecture of the place. The aim
of the exhibition is to enable enjoyment and sharing of art
works of great artistic value, belonging to the Berardo Collection, with the public at large, offering at the same time a
unique opportunity to visit the Cerro da Vila, a former Roman
village, in Vilamoura.

Uma edição da Câmara Municipal de Loulé que vem dignificar o nosso património cultural e que constitui “um maravilhoso tesouro memorial” do concelho.
The ‘Oral Heritage of the County of Loulé’ is a work that owes its
being to the wisdom and the contribution of excellent natural
informants from the county. And which survive because all of
us, who are involved in this research project, are aware of our
identity and have unveiled secrets, worded them, heard them
and put them down on paper – writes Idália Farinho Custódio
in note on the execution of the research…
Maria Aliete Galhoz also states in the Introduction, that the
reality and the meaning of this Oral Heritage of the County of
Loulé is an act of citizenship and of brotherly involvement - a
live memorial, an undividable wealth that unites generations
that are yet to come…’
An edition of the City Council of Loulé that dignifies our cultural heritage and which is a ‘wonderful memorial treasure’ of
our county.

Mobilehome é um projecto de escola nómada, experimental e independente de formação avançada no campo da arte
contemporânea, criado em 2009, com o objectivo de oferecer aos artistas fixados no Algarve uma plataforma de trabalho e discussão sintonizada com as temáticas estruturantes do
pensamento artístico contemporâneo. Os tutores convidados,
portugueses ou estrangeiros, artistas, curadores e professores,
mantêm uma actividade de relevo no panorama artístico internacional e aportam uma experiência e um conhecimento
específicos que permitem oferecer e desenvolver modelos de
pensamento que em muito contribuem para o desenvolvimento do percurso profissional dos participantes no curso.
A terceira edição do curso, realizada em Agosto próximo, será dedicada à prática e reflexão da fotografia enquanto meio
de construção do entorno e terá como tutor principal Joachim
Brohm, fotógrafo e professor da reputada escola de Leipzig,
que coordenará um grupo de trabalho cujo modus operandi
incidirá numa exploração documental crítica do variado e rico
território do concelho de Loulé, com o propósito de estabelecer a curto prazo um projecto dedicado à importante tarefa de
um registo visual abrangente, crítico e auto-reflexivo da paisagem algarvia, património identitário de valor individual e
social inestimável.
Mobilehome is an experimental and independent nomading
school Project of advanced training in contemporaneous art
created in 2009 with the aim of offering artists living in Algarve a working platform and an in tune discussion with the
structuring themes of contemporaneous artistic thought. The
invited tutors, Portuguese and foreign, artists, curators and
teachers, maintain an important activity in the international
artistic landscape and bring with them an experience and specific knowledge that will allow to offer and develop models of
thought that may contribute significantly to the advancement
of the participants professional career.
The third edition of the course will take place next August and
will be dedicated to photography practice and reflection as a
means of building the surrounding and which main tutor will
be Joachim Brohm, photographer and teacher from the renown Leipzig school, who will coordinate a work group which
modus operandi will focus on the documentary critical exploration of the varied and rich territory of the Loulé county, with
the aim of establishing, on the short term, a Project dedicated
to the important task of carrying out a broad critical and self-reflective visual registry of Algarve’s landscape, an identitary
heritage of priceless individual and social value.

Quarteira volta a receber neste mês, mais uma edição
do SurfóReggae, iniciativa promovida pela Câmara Municipal de Loulé e pela Associação Dinamika.
O Festival conta com um vasto programa de animação,
destacando-se a música de Marrokan, Batida, Sons of
Revolution e Ericeira Sound System.
Aos concertos juntam-se outras iniciativas como a animação de rua, box machine e touro mecânico.
Sem dúvida um dia bem passado em Quarteira tendo
por mote os sons do país de Bob Marley.
Quarteira will be hosting, once again this month, a new edition of the SurfóReggae, an initiative promoted by the Municipal Council of Loulé and by the Dinamika Association.
The Festival includes a vast entertainment program, in
which Frankie Chavez, Batida, Sons of Revolution and Ericeira Sound System’s music stands out.
Besides the concerts, other initiatives will be held, box
machine and mechanical bull.
Undeniably a well spent day in Quarteira, under the motto
of the sounds of the country of Bob Marley.

O festival da Cataplana Experience vai encerrar uma vez
mais, a temporada gastronómica do programa «Allgarve»,
juntando na Marina de Vilamoura «chefs» que vão ensinar a cozinhar.
Na 3.ª edição do festival, durante 4 dias, entre as 18:00
e as 00:00 horas, vão realizar-se espectáculos de «show
cooking» e aulas de cozinha com os «chefs» mais referenciados da actualidade.
O evento pretende promover a cataplana, um utensílio típico português da região do Algarve, com um enorme potencial e versatilidade. A cataplana permite cozer a vapor,
fumar e até mesmo elaborar sobremesas.
A entrada é gratuita e sujeita a marcações que podem ser
feitas no local a partir das 16:00.

The Cataplana Experience Festival will once again close the
gastronomic season of the ‘Allgarve’ program, gathering in
Vilamoura’s Marina a group of ‘chefs’ who will be teaching the
art of cooking.
In the 3rd edition of this festival, and for a period of 4 days,
between 6.00 pm and 12.00 midnight, ‘cooking shows’ and
cooking classes will be held with some of today’s most referenced ‘chefs’.
The aim of the event is to promote the cataplana, a typical Portuguese utensil from the Algarve region with a huge potential
and versatility. The cataplana allows you to steam cook, smoke
and even make deserts.
Admission is free and subject to booking that can be made on
site after 4.00 pm.

Os mais genuínos manjares, aliados ao tradicional folclore nacional, é aquilo que se poderá encontrar na Cortelha,
concelho de Loulé, nos dias 6 e 7 de Agosto.
A aldeia da Cortelha, situada em pleno interior do Concelho de Loulé, conhecida pela arte de bem receber, reaviva
os mais genuínos sabores da cozinha típica serrana, com a
realização dos deliciosos Manjares Serranos, que já vão na
sua 11ª edição.
A Associação dos Amigos da Cortelha, organizadora do
evento, pretende assim promover aquilo que de mais genuíno tem a sua localidade, conjugando-a, no mesmo
fim-de-semana, com o também tradicional Festival de
Folclore da Serra do Caldeirão, que na sua 8ª edição reunirá em palco grupos folclóricos representastes de várias
regiões do país.
On the 6 and 7 August, the most genuine delicacies associated
to national folklore can be found in Cortelha, in Loulé county.
The village of Cortelha, located in the interior of Loulé County and famous for its hospitality, revives the most genuine
flavours of the typical mountain food by hosting the famous
Mountain Delicacies, now in its 11th Edition.
The Friends of Cortelha Association, which hosts the event,
thus seeks to promote the most genuine of what the town has
to offer, combining it, during the same weekend, with the also
traditional Caldeirão Mountain Folklore Festival, now in its 8th
edition, gathering folk dance groups from different regions of
the country on the stage.

Jovens jogadores que em condições normais talvez nunca
tivessem oportunidade de visitar Old Trafford ou assistir

United Soccer Schools recognize the responsibility of having
an important role in divulgating the magic of the Manchester
United, and every year it gives thousands of your players the
opportunity to ‘Learn to play the United Way’.
Young players who, under normal circumstances, probably
never would have the opportunity to visit Old Trafford or to attend a game, may truly feel that they are part of the Club, participating in one of Manchester United’s World Soccer Schools
Programs.
This program has been structured to improve the technical
skills of children and young persons (boys and girls between 6
and 14), to encourage the development of their skills in specific training situations and to boost team work and mutual
support.

Na freguesia do Ameixial existem sítios com pouca gente, mas que são lugares agradáveis para morar. Aldeia
Nova é um desses locais onde a tranquilidade e a beleza
paisagística são factores de atracção.
Há cerca de 40 anos viviam aqui 13 famílias; hoje o sítio
tem apenas 6 moradores. Maria Teresa Fernandes nasceu
na Aldeia Nova há 64 anos. Reformada vive com o marido
em Lisboa, mas todos os meses vem cá matar saudades.
Antigamente as famílias eram auto-suficientes, semeavam o campo e criavam o gado, porém os tempos mudaram e o sítio foi ficando despovoado.
Aldeia Nova tem luz eléctrica e água dos fontenários e
está rodeada de sobreiros, azinheiras e até de algumas
árvores de fruto que enriquecem a mesa generosa dos
que cá ficaram.
No Ameixial estas aldeias constituem um verdadeiro “tesouro” de memórias e recordações.
In the commune of Ameixial there are several hamlets populated by only a few people although this is a pleasant places to
live. Aldeia Nova is one of those hamlets, which quietness and
beautiful landscape are important pull factors.
About 40 years ago, 13 families lived in this places; today, only
6 people live here. Maria Teresa Fernandes was born 64 years
ago in Aldeia Nova. She is a pensioner and lives with her husband in Lisbon, but every month she comes to this place to sort
of ‘catch up’. In the old days, families were self-sufficient, they
sowed the fields, raised cattle, but times have changed and the
place has become increasingly depopulated.
Aldeia Nova has electrical power as well as water from the
public drinking fountains and it is surrounded by cork-oaks,
holm-oaks and even some fruit trees that enrich the generous
table of those who stayed behind.
In Ameixial, these villages are a true ‘treasure’ of memories and
remembrances.

JOSÉ JOAQUIM SOARES
Natural de S. Romão (S. Brás de Alportel), José Joaquim Soares nasceu a 9 de Maio de 1895 e faleceu no dia 28 de Janeiro de 1950, em Lisboa, onde residia.
Formou-se em Direito pela Universidade de Coimbra, advogou durante alguns anos no Montijo, tornando-se notário em Silves (1913-1919) e posteriormente em Loulé
(1923-1948), tendo alcançado reputação em todo o Algarve.
Foi presidente da Câmara Municipal de Loulé entre 1926 e
1928 e entre 1932 e 1933. Além disso, esteve vários anos à
frente do turismo da Praia de Quarteira.
Durante os seus mandatos como presidente de Câmara
aprovou a ampliação da central eléctrica de Loulé, a criação de uma feira anual na freguesia de Salir, fez melhoramentos na Sala de Sessões da Câmara, entre outras obras
importantes.
Está também ligado à realização de numerosos melhoramentos e ao desenvolvimento da Praia de Quarteira,
existindo em homenagem à sua memória uma rua nesta
cidade com o seu nome.
Foi ainda sócio da Empresa de Viação do Algarve.

José Joaquim Soares was born in S. Romão (S. Brás de Alportel) on the 9 May 1895; he died on the 28 January 1950, in Lisbon, where he was living at the time.
He graduated in Law from the Coimbra University, practised
law for a number of years in Montijo and became Notary in
Silves (1913-1919) and later in Loulé (1923-1948), having
achieved reputation across the Algarve.
He was Mayor of Loulé between 1926 e 1928 and between
1932 and 1933. He was furthermore at the helm of the Quarteira Beach Tourism board for a number of years.
During his mandates as mayor he approved the expansion of
the Loulé power plant and the creation of an annual fair in
the commune of Salir, ordered improvements to be made to
the Town Hall Sessions Room, among other important works.
His name is also associated to numerous improvements and to
the development of the beach in Quarteira, where a street that
has been named in his memory.
He was also a shareholder in the public regional transport
company Empresa de Viação do Algarve.

Esta artéria, com início no Caminho para Santa Luzia, perpetua na memória de Loulé a figura de Ângelo Delgado
Guerreiro, médico louletano.
Nasceu a 22 de Setembro de 1915 em Loulé e faleceu na
mesma localidade a 21 de Agosto de 1979. Efectuou o ensino liceal em Loulé com o professor José Assis Ramos Barros, o único que ministrava aquele tipo de ensino na vila
de Loulé.
Frequentou a Faculdade de Medicina de Lisboa, tendo-se
formado em 1942.
Concluído o curso, exerceu Medicina em Loulé durante cerca de 40 anos, nomeadamente no Hospital da Misericórdia, tendo adquirido estima e consideração da população.
Solícito em minorar o sofrimento daqueles que a ele recorriam, tornou-se simultaneamente amigo dedicado que encorajava e confortava os pacientes.
Entre 1960 e 64 ocupou o lugar de vogal do Conselho Municipal de Loulé.

This thoroughfare, which starts at the Caminho para Santa
Luzia, preserves from oblivion the figure of Ângelo Delgado
Guerreiro, a physician from Loulé.
He was born on 22 September 1915 in Loulé and passed away
in the same town on the 21 August 1979. He took his secondary education in Loulé with José Assis Ramos Barros, the only
person who taught this type of education in Loulé.
He attended the Lisbon Faculty of Medicine, from where he
graduated in 1942.
After finishing his education he practised medicine in Loulé
for about 40 years, viz. at the Misericórdia Hospital, having
earned the populations high esteem and regard . Very obliging
in seeking to diminish the suffering of those sought his services, he became simultaneously a devoted friend who encouraged and comforted his patients.
Between 1960 and 1964 he was a member of the City Council of Loulé.

No mês de Agosto apresentamos o Missal de São Lourenço
como peça de arte sacra alvo de preservação.
O Missal de São Lourenço é um livro que contém orações do
cerimonial litúrgico da vigília, vésperas e festa em honra
deste Santo, letra e música.
Este livro pertencente à Igreja de São Lourenço de Almancil foi intervencionado a nível do suporte e da limpeza do
seu interior. Encontrava-se em razoável estado de conservação, por isso não necessitou de grandes intervenções a
nível de restauro, tendo-se destacado mais a implementação de técnicas que permitiram a sua conservação e preservação no tempo.
Os fiéis, nos meados do século XVIII, afluíam em grande
número à ermida de S. Lourenço na antevéspera e na véspera do dia de festa do Santo – 10 de Agosto.
Este ano as festividades em honra de S. Lourenço decorrem
nos próximos dias 13, 14 e 15 de Agosto e atraem muitos
fiéis e visitantes ávidos de conhecimento das nossas tradições. A igreja de S. Lourenço de Almancil é uma referência
patrimonial e cultural da região algarvia, sobretudo pelo
revestimento com belos azulejos do seu interior contando
a história e a vida do Santo.
In this month of August we present the São Lourenço Missal, a
sacred art item that has undergone restoration.
The São Lourenço Missal is a book that contains liturgical
prayers for vigil, vespers and feasts in honour of this Saint, in
addition to lyrics and music.
The book belongs to the São Lourenço Church, in Almancil, and
has been subject to intervention at the level of the support,
and the inside has been cleaned. The missal was in a reasonable state of preservation, so it did not require major restoration
work but rather techniques were implemented to allow for its
conservation and preservation over time..
In mid 18th Century, the faithful came flocking in large numbers to the S. Lourenço chapel on the eve before and on the eve
of the Saint Anthony’s Feast - 10 August.
This year, the festivities in honour of S. Lourenço will take place
on the 13, 14 and 15 August, drawing many faithful as well as
visitors eager to get to know our traditions. The S. Lourenço
Church, in Almancil, is a reference in terms of the heritage and
culture of the Algarve region, specially because of the beautiful glazed tiles on the interior that tell the history of the life
of the Saint.

AÇORDA À ALGARVIA
ALGARVE STYLE BREAD SOUP

receitas de gastronomia regional variada subtraída do livro “Gastronomia no Concelho de Loulé”.
The Loulé Municipal Agenda presents a selection of recipes
from our varied regional gastronomy, extracted from the book
“Gastronomy of Loulé County”.
AÇORDA À ALGARVIA
ALGARVE STYLE BREAD SOUP
Ingredientes
300 grs. de Pão duro caseiro; 4 ovos; 150 grs. de miolo de
amêijoa; 150 grs. de miolo de berbigão; 150 grs. de miolo
de camarão; 0,5 dl de azeite; 1 raminho de coentros; 1 cebola média; 3 dentes de alho; sal q.b.
Preparação
Cozem-se os miolos de berbigão, de amêijoa e de camarão,
reservando a água de cozedura dos mesmos. Pica-se a cebola e os dentes de alho e deitam-se num recipiente com
azeite, leva-se ao lume, deixando refogar um pouco. Assim que começar a alourar rega-se aos poucos com o caldo
da cozedura dos miolos e deixa-se levantar fervura. Junta-se o pão cortado aos bocados e mexe-se até obter uma
papa homogénea. Adicionam-se os miolos, os coentros picados e rectificam-se os temperos. Por fim, partem-se os
ovos para cima da açorda e deixam-se cozer. Antes de servir pode polvilhar com mais um pouco de coentros picados.
Ingredients
300 g homemade type bread; 4 eggs; 150 g unshelled clams;
150 g unshelled common cockles; 150 g unshelled shrimp; 0.5
dl olive oil; 1 small bunch of fresh coriander; 1 medium onion;
3 garlic cloves; salt to taste.
Preparation
Cook the unshelled cockles, clams and shrimp, setting the
cooking water aside for later use. Chop the onion and the garlic cloves and put them in a pot with the olive oil, turn on the
stove and let it fry a little. As soon as it starts to brown, add the
water from cooking the clams etc., and let it boil up. Add the
bread cut into big pieces and stir until you get a homogeneous mush. Add the clams, etc., the chopped coriander and season to taste. Break the eggs into the pot on top of the ‘açorda’
and let it cook. Just before serving add a little freshly chopped
coriander.
